Aging past Adult

How do folks handle a character who ages into a category, with an ability cap lower than their current rank in an ability such as an adult character with a seven who finds themselves now middle aged?

Also do folks assign flaws to characters who have aged into a category where they should have them? I assume since the cap on destiny points is not hard and fast they are allowed to lie as is.

I do not believe that cap applies post-character creation.

I give somebody a flaw in that ability at that moment. I did that also for NPCs like Barristan, who in my Westeros had fighting 6, and now has fighting 6 with 1 flaw in fighting.
