I would echo the calls for an expanded Westeros guide with extra house creation rules with expanded holdings and house management, prices (and more realistic prices) for a greater range of basic goods, sailing rules (including an example of naval combat), more qualities and drawbacks. I would also echo the calls for a sourcebook on Essos with more setting detail than we have in the current chapter, including how to use the house creation rules for things like Free Cities merchant families, mercenary companies, khalasars etc. more qualities and drawbacks.
Can I add a request for an historic Westeros sourcebook. The periods I think are most interesting without being too far removed are the Blackfyre Rebellion and the period afterwards upto the Dunc and Egg stories, Aegon's conquest, Daeron I's attack on Dorne, the invasion of the Rhoynish into Dorne, the Dance of Dragons but life is rarely dull in Westeros politics. I think what it would need is two things. The first is more detail on the the major players in each time period, e.g. King, Queen and major royals (or the equivalent for other factions) , small council/royal advisors, any other major figures e.g. war leaders or significant other court figures. The second would be more detail on the major events in each historical period and the events that lead up to them. This would give the GM enought of a skeleton to flesh out a campaign whithout breacking canon if the campaign is staying true to Westeros history or it would give the GM enough to be able to write a campaign that breaks canon if the campaign isn't. This may well require significant input from GRRM so I admit it is less likely.
Also a Court book would be really useful. A bit on how each Region is ruled and flavour on each court (Dorne, The North, The Vale, The Stormlands, The Iron Islands, The Westerlands, The Reach, The Riverlands). And then more information on the King's Court, the major offices outside the Small Council, how it should fit together (before personailities and politics gets involved), how the area around Kings Landing is ruled directly, etc. This could include a flavour of courtly activities and how they ebb and flow with the incredibly long seasons. Most of this can be brought together from the books and different sources on the courts of England, Scotland, France & Spain (to name but four) but it would e great to get that all pulled together and published officailly with GRRM's stamp of approval...
